Ingredients
  

  • Cottage cheese: Small-curd works best; 2% or full-fat makes crispier chips.
  • Salt and pepper: Start light; chips intensify in flavor as they dehydrate.
  • Seasonings (choose 1–2): Garlic powder, onion powder, smoked paprika, Italian seasoning, ranch seasoning, chili powder, everything bagel seasoning, or nutritional yeast.
  • Optional add-ins: Grated parmesan for extra crisp, finely chopped chives, or red pepper flakes.
  • Nonstick spray or parchment: For easy release and even browning.

Instructions
 

  • Prep the basket: Line your air fryer tray or basket with parchment or use a perforated parchment sheet. Lightly spray with nonstick spray.
  • Drain if needed: If your cottage cheese looks very wet, spoon it into a fine-mesh sieve and let it drain for 5–10 minutes. This helps it crisp.
  • Season the curds: In a bowl, gently mix cottage cheese with salt, pepper, and your chosen seasonings. Don’t overmix; you want curds, not a puree.
  • Portion the chips: Drop small spoonfuls (about 1 to 1.5 teaspoons each) onto the parchment, leaving space between. Flatten slightly with the back of the spoon to create thin rounds.
  • Air fry: Cook at 350°F (175°C) for 8–12 minutes, until edges are deep golden and centers look set. Time varies by air fryer and thickness.
  • Dry and crisp: Turn off the air fryer and let chips sit inside for 2–3 minutes with the door slightly ajar. This helps them firm up.
  • Cool completely: Transfer to a rack to cool. They’ll crisp fully as they cool.
  • Taste and finish: Add a pinch more salt or a quick dusting of seasoning if needed.
